Making a Christmas garland is a fun and kid-friendly project – I have such good memories of making simple popcorn strings with my grandmother when I was little! These garlands are a lot more sophisticated than a popcorn string, and they vary in difficulty a bit; but surely your kids could jump in on the fun for at least some of the steps of the project, if not the entire thing. : )
