Cake batter cookie ice cream sandwiches

This might just be the perfect treat. It’s ice cream, cookies, and cake all rolled into one delicious little ice cream sandwich. A cake batter cookie ice cream sandwich. With sprinkles. Delicious!!
Sally of Sally’s Baking Addiction says it took her over a year to perfect the recipe for the cake batter cookies, which are a cross between a chocolate chip cookie and funfetti cake batter. Mmm!
To make the cookies, you just need:
- 1Β batchΒ Cake Batter Chocolate Chip Cookies, cooled completely
- 1 quartΒ vanilla ice creamΒ (or your flavor of choice)
Once you have the cookies made and cooled, set the ice cream out for about 10 minutes to slightly soften. Take a large scoop and sandwich it between two cookies. Feel free to roll the sides in sprinkles or chocolate chips. Freeze the sandwiches until ready to eat.
Easy as can be!
