Birthday cake pancakes

I love birthday traditions! I grew up with quite a few to look forward to – just simple stuff, such as having special plates that were only used for birthday cake. And, no matter what, my birthday cake topper was always a train. It’s these sorts of little things that create lasting memories, I think!

One thing I didn’t have was a traditional birthday breakfast, but here’s what I wish I’d grown up with: birthday cake pancakes! How delish are these! They’re made with yellow cake mix in the batter so they actually do taste like cake. And the sprinkles… I’m sold.

Any idea how many this makes? My son is having a few friends over for a sleepover for his 8th Birthday and this would be perfect for him and his friends the next morning on his actual Birthday!
